Chop red and green cabbage, then mix with balsamic vinegar, Dijon mustard, lemon juice, low fat plain yogurt and pepper to taste. Stir in dried cranberries and sliced apple.


Salsa Wrap
Mix fresh salsa (make sure it is not high in sugar or fat-the best choice is home made!) with your choice of lean meat (tuna, chicken, lean beef, turkey, pork) and wrap up in a whole wheat wrap, or even better, make it a lettuce wrap! You can use regular tomato salsa or switch it up and use a mango or other fruit salsa

Cook chicken and toss with salad greens, mango slices, walnuts. Squeeze lime (lemon or orange) juice on top and season with pepper to taste.

Heat the broth in a sauce pan and add flour till it thickens. Add the turkey, vegetables, and garlic powder and allow it to cook till it is heated through. Once the thickened mixture is warm, spoon a few teaspoons onto the circles of dough, fold up the sides, and pinch them shut. Carefully roll each one into a ball shape. Sprinkle each ball with the cheese and sesame seeds. Arrange the balls on a greased cookie sheet and bake at 375 degrees for about 15 minutes or golden brown. Allow the balls to cool and then serve. Make sure to refrigerate or freeze any leftovers.

Low Fat Apricot Angel Food Cake Recipe

What could be better for dessert than something that is tangy, tasty, light, and only contains a trace of fat per serving? Sound impossible? Of course not! Give this delicious Apricot Angel Cake a try today!


APRICOT ANGEL FOOD CAKE
1 1/2 cups egg whites (apprx 10)
1 1/2 cups all-purpose flour
1 1/4 cups sugar, divided
2 tsp cream of tartar
1 tsp almond extract
1 tsp vanilla extract
1/4 tsp salt
1 cup apricot preserves
2 tbsp water


Place egg whites in a large mixing bowl and let stand at room temperature for 30 minutes.


Preheat oven to 350 degrees.


Sift flour and 1/2 cup of the sugar together twice; set aside.


Add the cream of tartar, almond extract, vanilla extract, and salt to the egg whites. Beat mixture on medium speed of electric mixer until stiff peaks form.

Gradually add the remaining sugar, about 2 tablespoons at a time, beating on high until stiff glossy peaks form and sugar is completely dissolved. Gradually fold in the flour mixture 1/2 cup at a time.

In a small mixing bowl, beat the apricot preserves and water until frothy. Gently fold this into the egg white mixture. Gently spoon the mixture into a non greased 10-inch tube pan. Cut through the batter with a knife to remove air pockets then place in the 350 degree oven. Bake 50 to 60 minutes on the lowest oven rack or until the cake is lightly browned and the top appears dry. Immediately invert pan and cool completely. This will take about an hour. Run a knife around the sides and center tube of the pan to loosen the cake. Remove cake to your serving plate. Frost, serve with fruit, glaze, or finish off to suit yourself.

This recipe is filled with vitamins and nutrients that you need for diet. You will need two large and fresh peaches, two tablespoons fresh lemon juice, cooking spray, and 2 teaspoons light brown sugar. What you need to do after lining a small baking pan with aluminum foil is to peel and halve the peaches. Then coat all sides of the peaches with cooking spray before sprinkling some lemon juice.

Place these on the baking pan, with the cavity side up, then sprinkle with 1 teaspoon brown sugar around every peach's top. Broil for about two minutes until sugar caramelizes and begins to glaze the peach.

This non-fat and cholesterol-free recipe yields 47 calories, 1 g protein, 12g carbohydrates, 1 g dietary fiber, and only 2mg sodium.


2. Banana Chocolate Parfaits


Using only low-fat yogurt, low fat frozen dairy whipped topping, sugar-free chocolate pudding mix, unsweetened cocoa powder, bananas, fresh lemon juice, and chopped walnuts. You would have to use a blender to combine the yogurt with the pudding mix until the mixture is smooth.


You should then cut each banana into diagonal pieces and sprinkle lemon juice on the pieces.

Place some of these on dessert parfait glasses and then pour the pudding mix on top. You will hen have to add 1 tablespoon whipped topping. Top this off with some cocoa powder, walnuts, and even cherries if you like.

3. Caffe Affogato


Lastly, you can try the Caffe Affogato, which is simply fat-free frozen vanilla ice cream topped with 2 tablespoons of hot espresso. This is non-fat and contains, 73 calories, 16 g carbohydrates, 37 mg sodium and 2 g protein.

Ingredients:
-1/2 cup flax seeds
-1/2 cup flax meal
-6 medium tomatoes
-1 cup sun-dried tomatoes, soaked 2 hours or more
-1 tablespoon lemon juice
-1/4 cup fresh basil
-3 tablespoons dried Italian herb mix
-3 medium onions
-1 clove garlic
• Grind all ingredients in a food processor
• Spread evenly and thinly over 2 Paraflexx dehydrator trays, right to the edges and then use a knife or spatula to score into individual squares .
• Dehydrate at 105 degrees for 3 hours then invert onto another mesh dehydrator tray to finish drying in the dehydrator for a further 10 – 18 hours.

Pine Nut Cheese Spread

Ingredients

-1/2 cup pine nuts
-1/2 cup macadamias
-2 teaspoons lemon juice


 


-1/4 teaspoon salt
-2 teaspoons nutritional yeast
-1/4 cup water
• Grind all ingredients in a food processor.

Tomato Sauce
-4 medium tomatoes, de-seeded
-1/4 cup sun-dried tomatoes, soaked 2 hours or more
-1 soft date
-1 clove garlic
-2 teaspoons olive oil
-1 tablespoon fresh basil
-1 tablespoon dried oregano
-2 teaspoons lemon juice
-Blend all ingredients in a high-speed blender until smooth.

Pesto
-2 cups basil, tightly packed
-1 tablespoon minced rosemary
-1/4c pine nuts
-1T olive oil
-1/4t salt
-2t lemon juice
• Pulse all ingredients in a food processor until broken down, but leaving some texture to the finished pesto.

Assembly
- Start with the flax cracker as a base to which you'll add a layer of the nut cheese spread.
-Next comes the tomato sauce and then top off with some pesto.
- Garnish with olives, capers and a sprinkle of Italian seasoning.

Variation: This recipe works great using marinated whole mushrooms as a base instead of flax crackers.

• Marinate 12 mushrooms in 1/4c tamari and 1/4c olive oil for 2 hours or more.
• Fill the mushroom caps with the nut cheese, tomato sauce and pesto.

Going heavier on the amount of pesto works really nicely with mushrooms.
• Once the mushrooms are stuffed, place in the dehydrator at 105 degrees F to warm through 1 - 2 hours.

This fruit salad combines chopped peaches, strawberries, bananas, blueberries or blackberries, red and green grapes, dressed with a simple fresh lime and pineapple juice dressing. Fruits are seasonal in Winter months may substitute peaches and strawberries with grapefruits, cantaloupe, kiwi or oranges. Substitute to taste.

-6 peaches, peeled, pitted and chopped
-1 pound strawberries, rinsed, hulled and sliced
-1/2 pound seedless green grapes

-1/2 pound blackberries or blueberries (to taste)
-small amount of honey (topping to taste)


Dressing:
-juice of one lime
-1/2 cup pineapple juice
-1 teaspoon ground ginger

Preparation:

How To Put It Together


1.

Marinate the shrimp with garlic, olive oil, thyme, scotch bonnet peppers, and salt for 1 hour.
2. Grill the shrimp until just done.
3. Slice the shrimp into strips.
4. Beat the lime juice into sour cream.
5. Spread the tortilla with the sour cream.
6. Toss the cabbage in the oil and vinegar.
7. Add the shrimp, cabbage, lettuce, and tomato to the tortilla and roll tightly, securing with skewers.
8. Trim the ends and cut the roll at an angle one third of the length then cut straight at the next third.
